Some of these contests are open to amateurs but do not prohibit professionals from entering in their rules. For many, entrants must be employed by a culinary institution, restaurant or foodservice organization in order to qualify.

WASHOKU WORLD CHALLENGE 2017 – ASIAN AND UNITED STATES TOURNAMENTS

DEADLINE

ASAP! (no later than early October 2017)

DESCRIPTION

Share your love for Japanese cooking by creating two recipes featuring dashi made from kombu kelp and bonito flakes. One must be a suimono (with at least three ingredients), and the other should be a fuchidaka mori (with at least five dishes). Both must reflect the UMAMI theme.
Contestants that pass the application screening will be asked to make the soup at the qualifying tournament (for five people, in 90 minutes); the regional winners will make the second dish at the final tournament (for five people, in 120 minutes.
Note: Specific end dates for applications in these 5 regions have not been announced.

ELIGIBILITY

Open worldwide to chefs with at least 2 years experience as a chef, and experience in cooking Japanese cuisine. Not open to chefs of Japanese nationality. Must be able to participate in one of the qualifying tournaments (transportation is not provided at this level of competition).

PRIZES

6 Regional Prizes (1/region): Travel and hotel expenses for the final tournament, to be held in Tokyo, Japan on February 13-14, 2018. Winner will also participate in Japanese cooking seminars in Japan, have the chance to apply for the Certification of Cooking Skills for Japanese Cuisine in Foreign Countries (Bronze), and be covered by international media.
Grand Prize: No mention is made of a top prize, other than the recognition it will bring.

UAPB SWEET POTATO COOKING CONTEST

Submit your best sweet-potato based recipe (excluding pie). Five finalists will be selected to participate in a cook-off September 8, 2017 at the UAPB Agriculture Research Station.

Submit an original recipe of a hamburger or sandwich that features a signature condiment using at least one Minor’s® Ready to Flavor™ product, either a base or a flavor concentrate. The required Minor’s® Ready to Flavor product must remain unheated throughout the preparation of the signature condiment to demonstrate the Ready to Flavor advantage.The sandwich and/or other condiments may be cooked. All ingredients must be readily available and cost effective for food service.

ELIGIBILITY

Open to legal residents of Canada (excluding QC) and the 50 United States and DC who have reached the age of majority. Must be a Foodservice Operator who develops or prepares recipes for menu items served to paying guests as your primary form of employment.

PRIZES
